Garlic, Sungold Cherry Tomatoes
Cut a pint of sungold cherry tomatoes in half and toss with olive oil. Lay in a baking sheet cut side up with smashed garlic cloves and season with s&p. Roast at 400 for 20 to 30 minutes till caramelized. Puree in a blender or food processor. Put in a pan adding more evoo if needed. Sautee and pour heavy cream slowly, depending on your desired consistency. Toss cooked pasta adding more pasta water if needed. Sprinkle fresh chopped basil and serve with grated cheese.
